National Meatball Day! (recipe)

Ingredients:

  • 5 lbs. ground veal
  • 15 lbs. ground beef
  • 5 lbs. brioche bread crumbs
  • 4 quarts heavy cream (36%)
  • 1/3 cup garlic power
  • 1/3 cup onion powder
  • 1/3 cup herb mix
  • 2 tablespoons red chili flakes
  • ½ cup kosher salt
  • 6 lbs. ricotta cheese
  • ½ cup flour
  • 5 cups chunky marinara

Directions

  1. Rob-coup brioche until it is very fine
  2. Place bread crumbs in a mixing bowl with meat
  3. Add dry ingredients, ricotta and sauce
  4. Pulsate the mixture together
  5. Slowly add cream to the mixture
  6. Blend together for five minutes, and let the meat rest for several hours
  7. Portion to 9 oz. meatballs. Deep fry at 350 degrees until golden brown
  8. Place in a 4” hotel pan and cover with marinara sauce. Cover with foil and bake at 325 degrees for 60 minutes, or until the internal temperature reaches 180 degrees
