Orange peanut coleslaw (recipe)

Orange Peanut Coleslaw

  • 6 cups chopped red and green cabbage
  • 2 cups diced peppers – red/green/yellow
  • 2 cups shredded carrots
  • 1 cup diced red onion
  • 1/2 cup chopped green onion
  • 2 cups salted roasted peanuts
  • 1/2 cup chopped cilantro (if desired)

Dressing:

  • 1/4 cup seasoned rice vinegar
  • 1/4 cup thawed orange juice concentrate
  • 2 teaspoons grated ginger
  • 1 teaspoon orange zest

(increase dressing as desired)

Assemble and refrigerate for 2 hours.

Keeps well for 3 days.
