Orange peanut coleslaw (recipe)

Orange Peanut Coleslaw
- 6 cups chopped red and green cabbage
- 2 cups diced peppers – red/green/yellow
- 2 cups shredded carrots
- 1 cup diced red onion
- 1/2 cup chopped green onion
- 2 cups salted roasted peanuts
- 1/2 cup chopped cilantro (if desired)
Dressing:
- 1/4 cup seasoned rice vinegar
- 1/4 cup thawed orange juice concentrate
- 2 teaspoons grated ginger
- 1 teaspoon orange zest
(increase dressing as desired)
Assemble and refrigerate for 2 hours.
Keeps well for 3 days.
