GDC: Back to school breakfast (recipes)


Jennifer Pitcher from Meijer shared some delicious breakfast recipe ideas!

As we celebrate Family Meals Month this September, challenge your family to share 1 more meal each week. If the dinner hour is too hectic with kids activities, try getting together for a meal in the morning! It’s also a great way to get in fruits and vegetables at EVERY meal. Here are some easy, family-friendly breakfast ideas that kids can help make the night before:

Morning Egg Muffins

1 Tablespoon True Goodness™ by Meijer® olive oil

4 Cups baby spinach, chopped

3/4 cup chopped tomato

1 1/2 cup shredded zucchini

1/2 cup chopped green onion

12 True Goodness™ by Meijer® eggs

¼ tsp garlic powder

Salt and pepper

½ cup shredded cheddar cheese


1. Preheat oven to 350 degrees F

2. Prepare muffin tin – coat with cooking spray or use silicone baking cups to prevent sticking

3. To a pan over medium heat, add olive oil and saute vegetables until soft

4. In a mixing bowl, beat eggs and add in spices

5. Put a spoonful of the vegetable mixture in the bottom of each muffin tin. Pour the egg mixture over the top

6. Sprinkle cheese shreds over the top of each muffin

7. Bake for 20-25 minutes, until eggs are golden and center is cooked through

Overnight Oats Basic Recipe

Combine In a Mason jar:

1/3 cup True Goodness™ by Meijer® rolled oats

1/2 cup True Goodness™ by Meijer® milk

1/4 cup plain Greek yogurt

1 tsp chia seed

1/2 Tbs. pure maple syrup

1/8 teaspoon True Goodness™ by Meijer® cinnamon

1/4 tsp vanilla

Shake jar REALLY well to mix all ingredients. Let sit overnight in fridge. In the morning, stir, add more milk if desired. Top with your favorite fruit, nuts or seeds.

337 calories, 7g fat, 73mg sodium, 50g carbohydrate, 8g fiber, 19g protein

Chocolate Berry:

Add 2 teaspoons cocoa powder before mixing. After stirring in the morning, top with raspberries or blueberries and mini chocolate chips or cocoa nibs.

Fall Fun:

Add chopped apples and True Goodness™ by Meijer® walnuts

Pumpkin Spice:

Add ¼ cup pumpkin puree and 1/8 teaspoon nutmeg before mixing. Top with chopped pears and pumpkin seeds.
